Happy Monday all!
Mondays tend to be rough days for me. The mornings always seem as hectic as they can possibly be and love to test my patience. I'm starting to think this is the most important day for us to MAKE it to the gym. What better way to fight the Monday blues than with a good workout. Okay, so maybe it isn't always the best workout on Monday. Usually one of of us is literally dragging the other one out of bed, but it does set the rest of the week in to physical motion and surely helps those blues!
For lunch today I made the best bean salad ever, so I just had to share. And to top it off, Andrew showed up unexpectedly to share in the yumminess with me. It's those little things that make me happy. :) Not only was it absolutely delicious, it was quick and easy to put together. And incredibly healthy!
Here's the ingredients:
1 can black beans
1 can red beans
1 can white beans
About 10 black &/or green olives, sliced
1/2 cucumber, chopped
Chopped cilantro to your taste (I like a lot!)
Olive oil & vinegar of your choice
At 5:30 this evening, we will head out for our weekly hike. If anyone is ever interested in coming along on our Monday hikes, just email me and let me know. We'd love to have your company!
