First fall recipe!

Sweet Potato Soup

Combine the following ingredients in a pot and simmer on medium-low for about 30 minutes.
1 qt. vegetable broth
1 can light coconut milk
1 can diced tomatoes1 extra large chopped sweet potato
1/2 chopped red or white onion
2 large garlic cloves, minced
3 diced red jalapenos
After 30 minutes, add the remaining ingredients. Continue to simmer at about medium until all the veggies are at your desired softness.
1 can black eye peas
1 can kidney beans
1/2 each chopped yellow & green squash
1 crown chopped broccoli - added after sweet potatoes are soft.

Seasons of choice, to taste (I just used salt & pepper).
Simmer until all veggies are tender and enjoy! :)
