Vegetarian Nutloaf

Vegetarian, grain-free nut & veggie loaf:

Bake at 400*for about an hour or until cooked all the way through.

All ingredients chopped:

2-3 cups walnuts (you can also use a mixture of walnuts, almonds & pumpkin seeds)
About 1/2 cup of flax meal (you can also use crushed wheat crackers or garbanzo flour)
½ bell pepper (I used orange and/or yellow)
About 10 baby carrots (optional)
2 large garlic cloves
½-1 onion (I used yellow and/or red)
Hand full of broccoli and/or cauliflower
1 tomato or small can tomato sauce or paste
3 eggs
3 diced red chili peppers
½ - 1 cup shredded cheese of choice
Tsp ginger or ginger paste
Salt, pepper, basil & parsley

I love this dish because it is SO versatile. You can swap ingredients with what you want and/or what needs to be used up in the fridge.
