Stuffed Portobello Mushrooms


This is a first for me: Stuffed Portobello Mushrooms. This is such a versatile dish. You can really add or eliminate whatever you want. Here's the laundry list of things I used (I chopped or diced every ingredient and mixed together):

The stems of the mushrooms
Yellow bell pepper
Cherry tomatoes
Onion
Spinach
Cauliflower
Garlic
Carrots 
Capers
Sundried tomatoes
Fava (or any type) beans for added protein
Feta, parmesan & mozzarella cheeses
Basil, pepper & cumin

Baked at 400* for about 30-40 minutes.
